Tomato Scrambled Eggs with Boiled Yam.

Tomato Scrambled Eggs with Boiled Yam is a very nice and easy to make daily morning meal. It is delicious all thanks to the freshness of the tomato and the vibrant red color it adds to the eggs goodness.

Not also forgetting to mention the green specks of nutrients the spring onion brings , just to make this dish come alive.

HOW TO PREPARE

Ingredients :

  • Yam
  • Eggs [ dependent on family size /preference]
  • 1/4 cup of milk
  • 2 tablespoon margarine
  • 1/2 Onion [ diced small]
  • Spring onion stalks [ for garnishing]
  • 1/2 cup cherry tomato [ halved]
  • Seasoning cubes, Salt, and pepper,

METHOD OF PREPARATION

Step 1 :

  • Wash your egg
  • Break the eggs and whisk properly
  • Add milk and whisk again

Step 2 :

  • Heat margarine [butter]
  • With reduced heat, Fry onion & fresh pepper, add seasoning cube and salt and cook for 2mins.
  • Add the egg mix, stir properly under medium heat.

Step 3 :

  • Allow the egg to set, stir to scramble gently with a fork [ pull the edges towards the center of the pan]
  • Cool for 4mins, make sure egg is still and moist once heat is turned off.
  • Serve with plain boiled yam garnished with chopped spring onion.
